Cauliflower Tabouli

1 head cauliflower
¾ cup grape tomatoes
3 oz fresh squeezed lemon juice
4 Tablespoonfuls olive oil
3-4 green onions
1 bunch parsley
½ cup mint leaves
salt and pepper to taste

Grate the raw cauliflower into a large bowl.  Cut the tomatoes in half and finely chop the onions and mint.  Toss with cauliflower.  Whisk together the lemon juice and olive oil.  Toss in salad.  Season with salt and pepper.  Serve cold.

Makes 4-6 salad size servings.
