Quinoa Salad with Peaches

1 1/2 cups water
3/4 cup uncooked quinoa
1/4 cup minced red bell pepper
1/4 cup chopped green onions
3 tbsp fresh lemon juice
1 1/2 tbsp olive oil
1/2 tsp kosher salt
1 1/2 tsp honey
1/4 tsp black pepper
1 sliced ripe peach

Bring water to a boil in a medium saucepan; add uncooked quinoa. Cover, reduce heat, and simmer 20 minutes. Cool quinoa slightly.  Stir in peppers, onions, lemon juice, olive oil, salt, honey, pepper and peach  Serve immediately or chilled.
