¾ cup unbleached flour
¾ cup polenta (or yellow cornmeal)
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1-1/4 cups buttermilk
2 large eggs
3 Tablespoons melted butter
vegetable oil for cooking
Add all dry ingredients to a medium mixing bowl and mix together. Add milk, eggs and butter. Whisk until just blended. Heat griddle or heavy skillet with oiled surface and cook pancakes about 1-1/2 minutes on each side or until golden. Use about ¼ cup batter per pancake. Serve warm.
