Pecan Pie Muffins

1-1/2 c. pecans, chopped
1-1/2 c. brown sugar
1 c. unbleached flour
1 cup white whole wheat flour
½ tsp salt
3 eggs
¾ c. melted butter

Combine flour, sugar, salt, and pecans in a large bowl. Make a well in the center and add beaten eggs and butter.  Stir until just blended.  Do not over stir.

Line a 12-cup muffin tin with muffin papers or spray with cooking spray.  Divide the batter evenly in the cups.

Bake for 25-30 minutes in a preheated 350° oven.  Do not over cook.  Remove from oven as soon as the muffin centers seem solid and golden.
