Easy Pasta Salad

½ pound vermicelli (or other small pasta), broken into 2” lengths, cooked and drained. Cool to room temperature.
1 can small diced tomatoes
½ cup thinly sliced green onions, white and green parts both used
½ cup small diced sweet red pepper (or green if you prefer)
½ cup frozen sweet petite peas (uncooked)

Toss all the above together in mixing bowl.


2 Tablespoons apple cider vinegar
1-2  cloves garlic, crush with knife blade and mince fine or ½ teaspoon garlic salt
1-2 teaspoons dried basil (We use Penzey’s)
½ teaspoon oregano (or marjoram)
salt and black pepper to taste
¼ cup olive oil

Place all ingredients in a small sealed container and shake well.  Pour over salad, toss and serve.  This is good chilled or at room temperature.
