2 cups unbleached flour
1 tsp baking powder
1 tsp coarse salt
2-1/4 sticks butter
1 cup packed light brown sugar
¾ cup granulated sugar
2 eggs
1 Tbsp vanilla extract
1 cup grated coconut
3 cups dried fruit
3 cups chopped nuts
4 cups oats
Preheat oven to 350*
Cream butter and sugars together until fluffy. Mix dry ingredients together and add gradually to sugar mixture. Add vanilla and then eggs one at a time. Blend well but do not over beat. Fold in coconut, nuts, fruit and oats.
Press into jelly roll pan and bake for 15-20 minutes (Do not over bake)
Allow to cool, cut into squares or bars
These cookies are a hit for any occasion but are especially good when a portable breakfast bar is helpful. It’s your own home made granola bar.
Be creative with fruit. I love fresh dates with walnuts and pecans. Dates and apricots are good also. Your local big box store will likely have a big selection of good quality dried fruit. Cherries, blueberries, craisins….the possibilities are endless.
