Citrus Marinated White Fish

¾ cup fresh cilantro, chopped and divided
2/3 cup fresh squeezed lime juice
¼ cup minced garlic
1 Tablespoon ground cumin
3/4 teaspoon sweet smoked paprika
1 teaspoon honey
1 medium red onion, sliced thin
1 orange or yellow bell pepper, sliced into ½” strips.
1 to 1-1/2 pound firm white fish filets such as tilapia.

Combine ½ cup cilantro, lime juice, garlic, honey, and half of the cumin and paprika in a shallow sealable container or a 1 gallon zip seal bag.  Mix well.  Add the fish, seal bag or container, and allow to marinate in the refrigerator for 1-2 hours (may leave in marinade longer if necessary).

Preheat oven to 450*.  When fish is ready to cook, arrange filets on a baking sheet that has been sprayed with non-stick cooking spray.  Bake for 15-20 minutes, depending on the thickness of your filets.  Sprinkle with remaining cilantro, cumin, and paprika, and serve.
